Double-Cooked Pork With Garlic

A hearty winter dish that can be prepared on a budget

Ingredients

Cuts of pork such as pork chops, shoulder chops, etc., not necessary to use the best cuts

Garlic (four to six cloves)

Butter or lard (two to three tablespoons)

Extra virgin olive oil (two to three tablespoons)

Hot chili flakes

Grainy mustard (about a tablespoon)

Coarse salt

How to cook

For the first cooking, melt the butter or lard in the olive oil using a large shallow stockpot adding coarsely chopped garlic and chili flakes to taste. Use low to medium heat. Once the butter or lard are melted, place the pork cuts into the pot single layer and sprinkle with the coarse salt. Be careful, you can always add some later. Cover the pot and simmer on low to medium heat or place in a 350 degree oven for between 45 minutes and one hour.
